We can`t imagine any world kitchen without vegetables and Abkhazia is not an exception. Potatoes, beets, carrots, onions, garlic, cabbage, hot pepper and bell peppers, beans, laurel, herbs, grains are grown in the country. The large place in preparation of the cereal crop takes the corn.
Corn appeared in Abkhazia in the early 17th century. In Abkhazia the national corn cereal Abista is made by the corn flour.
A large number of herbs are grown in Abkhazia, Usually they are dried, crushed and prepared aromatic mixtures and spices for different dishes. Classical Abkhazian adjika is cooked by rubbing all the components by the special stone, but because of its popularity, nowadays adjika is produced by means of industrial way, using special equipment. Today the main manufacture, exporting adjika is LTD «AbkhazProduct». The volume of adjika, produced by «AbkhazProduct» is more than 100 tons per year. The entire produced product is exporting.
Essential oil-yielding crops grow in Abkhazia as well. The most widely used crops are: laurel, geranium, basil, eucalyptus, jasmine, rose essential oil, tung. Laurel leaf has a pleasant spicy odor and bitter taste. It does not lose its flavor at long storage. The leaves have been used for a long time as a traditional spice. In large quantities they are used in the food and canning industry, in the preparation of pickles. All parts of the laurel contain essential oil, tannins, resins, and bitterness. The content of essential oil in the leaves of laurel reaches 3-5.5%, the fruit - up to 1%. The essential oil is used in veterinary medicine, soap production, cosmetics, confectionery industry.
